Ingredients
    Scrambled Oat Pancake
  • 1 Banana (medium sized banana)
  • 1 Egg
  • 1/2 cup Rolled Oats (Instant oats are fine too if you have no rolled oats)
  • Sides
  • 1/4 cup Plain yogurt or Greek yogurt (Your yogurt should be full fat.)
  • 2 Mango strips
Steps
  1. 1. Peel and mash the banana.
  2. 2. Break the egg into the mashed banana.
  3. Add the oats and mix until well combined.
  4. Pour butter/ghee/coconut oil into a pan on low heat
  5. Pour in to oat batter and allow to set for about 2 mins.
  6. Begin to scramble into large chunks until its dry, i.e the oats absorbs all the butter.
  7. Serve the scrambled pancake into a portion suction plate.
  8. Add the yogurt and mango strips on the other sides of the portion plate.
