
Nutrient Dense Sweet Potato Brownie🎂

These kids won't allow me rest, this holiday. Mummy I want this, mummy I want that.
I had lots of sweet potato, I didn't want to steam, or fry. So decided to make this sweet potato brownie.
With very minimal yet nutritious ingredients the brownie came out very delicious 😋

Mix all dry ingredients together in a bowl and set aside.

Mix all wet ingredients in a bowl.
The egusi butter, AKA melon seeds where blended until a plate was formed.

Pour in the dry ingredients and then fold it it.
Do not over mix the batter, fold until its just combined.

Pour in a portion of the chocolate chips and fold in.

Pour the brownie batter into a well greased pan, then sprinkle the left over choc chips on the top.

Bake at 350 Degree Celsius for 20 mins or until a toothpick comes out clean.

Allow to cool down, remove from the pan and cut into pieces.
Note
You can try out other variations of this recipe with mashed pumpkin, butter squash and it will taste so great.
