A regular during the Christmas season 🎄

It’s a great drink on its own, but I also use it when my kids have a cold. This is because of the ginger, lemon and honey in the drink.

I usually serve it warm when they have a cold but otherwise it’s great when it’s chilled 😃

In this batch, I added some grapes and dates to the mix when boiling, this just added some extra flavor.

In case you don’t have honey, well you can boil with dates. Just make sure you remove the seeds from the dates and wash properly.

PS:
🍎 if you will be using it for colds, give your kids about 2-3 times a day, remember to serve warm.
🍎 Please wash your fruit, ginger and cinnamon properly before boiling.

It’s so versatile, It can be toasted, you can use whatever spread you love, you can use it as a burger bun. So much possibilities with this very simple bread.

Let’s move to the ingredients and alternatives that can be used.

Ingredients:

1. Almond flour (other flours you can use are all purpose flour, coconut flour, oat flour, Bambara flour, Tigernut flour all the flours I have used have worked well. Of course some flours make the bread more dense than the others.
2. Olive oil ( you can use melted butter, ghee, coconut oil, avocado oil, peanut butter)
3. Egg
4. Baking powder 

Steps
1. Mix all the ingredients together in a well greased pan.
2. Place in an oven to bake

* If using a microwave, bake for about 90 secs on high( mine is 700w) 
* If using an oven, bake for about 5-7 mins.
* If using a pot, you can bake for about 10 mins on low heat.

Well, I leave this yummy combo to your kids tastebuds 🤣
So yummy, fluffy and dry. The blend is heavenly.

You can make this in bulk and freeze in an airtight container.

No long story today, let’s go right to the recipe.

It’s pretty straightforward, just save this for Saturday’s breakfast.😜

Ingredients
🥞 Flour (1cup)
🥞 Corn meal (3 tbsp)
🥞 Chia seeds (2 tbsp)
🥞 1tsp baking p
🥞 A pinch of salt (I use raw sea salt, much better than the processed salts around)
🥞 1 egg
🥞 2 tbsp oil/melted butter/ ghee
🥞 1 cup of tigernut milk or any other milk will work.

Steps
1. Mix dry ingredients together (flour, baking powder and salt)
2. Mix in wet ingredients ( egg, oil & milk)
3. Now combine the wet with the dry ingredients. (now the secret to fluffy pancakes is not to overmix the batter. It should be lumpy, thick and allowed to rest for about 10 mins)
4. Brush your non stick pan with little oil on low heat.
5. Pour in scoops of your pancake batter, when holes start forming at the top, turn pancake over. 

Filling
1. Fry your sunny side up egg and place between 2 pancakes.
2. You can also add jam or ketchup or mayonnaise (it’s up to you)

Something simple for the kiddos, no stress and fast to make.

If your kids are doing you shakara with boiled sweet potato, use this format for them😀 

Before I started this, na cajoling we were always doing, but now it's "Mummy we want pizza" 💃🏽💃🏽💃🏽

Well… na to change everything to pizza or burger format ni ye ohhh🤣🤣🤣🤣🤣

Other toppings you can add are some homemade sausage, ketchup and cheese to make it really feel like it’s Pizza 😀😀

It's fantastic! They'd adore it. Hmm… I'm hoping Mummy and Daddy leave some for the kids because it's that good.😀

Sugar cane contains numerous health benefits. It's loaded with carbs, protein, vitamins (A, B-Complex, and C), and minerals. Let's use it now that it's in season. 

This drink is simple to make. All you require is 

🍏 A little sugar cane. 
🍏 Some freshly squeezed sweet fruit juice. 
🍏 Lemon or lime juice ( this gives it that tangy flavor)
🍏 A sweetener (optional depending on how sweet you want it) 
🍏 Some liquid whey, which is optional but beneficial

Fruit juices you can use👇🏽

Fresh juices from acidic fruits such as pineapple, apple, pear, oranges, and tangerines should be used. When mixed with water, the flavor is fantastic. 

Sweetener👇🏽

To make the drink sweeter, add honey, date syrup, or natural cane sugar. 

Liquid Whey 👇🏽

This is the clear liquid that appears after straining yogurt. It's not required, but it's a nice bonus, it contains some probiotics and minerals 

Cutting the sugar cane👇🏽

1. Cut the soft part of the sugar cane into small pieces and wash them in a solution of warm water and vinegar or salt. 
2. You can ask the Malams to cut it for you if you don't want to do it yourself.

This is for you. 4 nutrient packed purées you can try out for your little one.

They are very quick and easy to do. You can prepare in bulk and freeze.

Share with other first time mums and save so you can always come back to it.

Recipes👇🏽👇🏽👇🏽 

1. Sweet Potato Purée
🍼 Peel and boil sweet potatoes until very tender.
🍼 Blend cook potatoes until very smooth.
🍼 Add breastmilk or baby formula when ready to feed.

2. Pawnana Purée
🍼 Cut banana and pawpaw/papaya into small chunks.
🍼 Blend or mesh until very smooth.
🍼 Add breastmilk or baby formula when ready to feed.

3. Cadonana Purée
🍼 Peel & cut banana and avocado into small chunks.
🍼 Blend or mesh until very smooth.
🍼 Add breastmilk or baby formula when ready to feed.

4. Pumpkin & Apple Purée
🍼 Peel and steam pumpkin and apple until very tender.
🍼 Blend both pumpkin and apple until very smooth.
🍼 Add breastmilk or baby formula when ready to feed

How to make your gummies

It's so easy to make and you can make about any fruit or veggie combination you can think off, you can include all the fiber, it's all up to you.

The ingredients are quite simple;
1. Your blended fruit or veggie
2. Gelatin
3. Sweetner (optional)

A little about gelatine
Gelatin is made when the animal collagen in the connective tissue, skin, and bones is heated slowly until it is broken down, creating a gelatinious substance. 
Now the gelatin powder is made when this substance is dried out and then becomes individual grains. 

You will need about 2-4 tablespoons per cup of blended fruit depending on how hard you want your gummies to be.

I use 2 tablespoons per cup.

Sweetners may not be necessary depending on your fruit or veggie blend. 
But if you will need to sweeten, then honey or date syrup will be fine.

Go ahead and try it, I am sure your kids will love it, this is just another fun way to get them to eat their fruits and it's a healthy snack😀

  • Make your Greek Yogurt at home😀

I got basically 2 questions from yesterday's post.

1. What Greek yogurt would you recommend?(If you can't make yours, try Dios Dlite)
But nothing beats homemade 👍

2. Can I use Hollandia yogurt?( NO! do not use this. It's a drink packed with sugar and additives and it's NOT for babies)

Well, I thought why not bring back my Greek yogurt recipe. It's quite straight forward, but you need a little patience for the milk to do it's thing😀 

Yogurt is safe for babies right from 6 months, as long as it's full fat or whole yogurt. Highly proteinous and full of good fat. So it will be good to always have a bowl in your fridge 😉

Follow these few pointers so you don’t end up with a failed yogurt.

Remember to save this recipe, so you can always come back to it.

In this recipe, I used
🥛 1 cup powdered milk ( full cream milk)I used Peak full cream, Dano full cream is okay.
🥛 1 tin of full cream evaporated milk.
🥛 4 tbsp yogurt with live culture at room temperature. More about this in a bit.
🥛 2 1/2 cups of water.

Here are a few pointers you need to take note of so you always have the perfect yogurt .

1. Use yogurts with live culture in them, you can check the ingredient list. The yogurts I have used that worked well were farm fresh, Habib, Estate Yogurt, Dios Dlite. Any you choose to use it’s fine, just make sure it has “live culture” in the ingredient list.

2. When you boil your milk, make sure it cools to a point where it’s still warm but not hot so it doesn't kill the live culture. Also, the milk shouldn’t get too cold so it gets the live culture working.

3. Make sure the bowls used to make your yogurt are clean. You can just rinse with hot water. This cleans out any unwanted bacteria that can disrupt the culturing process.

4. Your yogurt culture should be at room temperature before mixing into your milk.

5. When straining the yogurt to Greek yogurt, place in the fridge and let it do it’s thing. The whey that strains out (I.e the clear liquid) can be used In purées, smoothies. It’s has lots of nutrients in it.
