Stir-Fried Egg & Veggie Noodles

The little man refused to allow me take the picture of the meal and kept digging into the plate. Had to take a shot anyhow.
But today’s meal is stir fried noodle (without the seasoning) with veggies. I used coconut oil to stir fry.
It’s relatively a very simply meal that can go for the family and kids.

Ingredients

  • Noodles ( preferably wheat noodles if you have access to it)
  • Carrot
  • Green pepper
  • Yellow and red bell pepper
  • Spring onions
  • Onions
  • Nutritional yeast (seasoning)
  • Sea salt

Steps

  1. Break noodles to small pieces and per-boil in hot water. It should get too soft.
  2. Once it's a bit soft, drain off the hot water with a sieve and pour ordinary or cold water over the noodles.
  3. Chop carrots, onions, pepper and doing onions
  4. Using a non stick pot and low heat ( if available) heat up a little coconut oil.
  5. Pour your onions, carrots, bell peppers, sea salt.
  6. Once your veggies are soft, add the noodles and mix thoroughly.
  7. Add nutritional yeast till you have your desired taste.
  8. Finally add the spring onions and take off the fire.
  9. Fry the egg separately and just mix with the noodles.

Ingredients

  • Watermelon
  • Strawberries
  • Vanilla yogurt

Steps

  1. Cut watermelon into pieces
  2. Wash, clean and cut up strawberries
  3. Puree 2 cups of watermelon, 1 cup of strawberries and 1/4 cup of vanilla yogurt, till desired consistency is achieved.
  4. Serve chilled.
  5. Really nice guaranteed.

Beetroot and Potato Puree

Ingredients

  • 1 med sized beetroot
  • 1 med sized potato
  • 1/4teaspoon turmeric powder (8 months and above)
  • 1/4teaspoon cumin powder (8 months and above)

Steps

  1. Wash the vegetable very well (beetroot and potatoes), peel the skin and dice them.
  2. Put both veggies into a pressure cooker, add 3-4 tablespoons of water and pressure cook till you hear whistles. Turn the heat to low and simmer for a couple of minutes after you have heard a couple of whistles. Turn off the heat.
  3. Allow pressure to release naturally in the cooker.
  4. Open the cooker, place the beet and potatoes in a mixer grinder and puree into desired paste.
  5. Add a pinch of salt to taste.
  6. Add water to achieve consistency due to age of baby.
  7. You can add plain yogurt to help with easy digestion for the baby (optional)

Ingredients

  • Depending on the sizes available
  • 2 large sized carrots

Steps

  1. Wash, peel and slice carrots
  2. Put slices into a pressure cooker(fastest and healthiest choice) and add 2-3 tbsp of water. Pressure cook till you hear 2 whistle sounds
  3. Put the pressure cooker under running water and let it cool.
  4. Once cooked well, put slices in a blender or for those who have or use a baby food blender, puree until smooth. Add water to achieve desired consistency.
  5. Dish up and serve baby.

Carrots are a must have, and should be among the 3 foods to be added into our babies diet. Reasons why listed below:

Carrots are rich in fibre, which helps with normal bowel movements for the baby. Also rich in iron, calcium and Vitamin C.

Carrots are also known to very effectively build up the immune system, which is very important in the life of our babies.

Carrots can also be mixed with other cereals or made into a warm soup.

Be adventurous with your baby, try various combinations.

Ingredients

  • 1 med sized sweet potato root (peeled and diced)
  • 1 red bell pepper (seeded and diced)
  • 1 regular sized pear fruit (peeled and diced)
  • Pinch of nutmeg

Steps

  1. Place the sweet potato and pepper in a saucepan. Add just enough water to cover. Boil and simmer on low heat for 15 minute.
  2. Add the pear and nutmeg, simmer for another 5 minutes.
  3. Puree the sweet potato, pepper and pear in a food processor or blender, adding a little of the cooking liquid to achieve the desired consistency.
  4. Dish up and serve.
